At first, Castiel fought alongside Dean and Jo, allowed himself to be dragged into territory wars and lent his angelic power to whoever Dean deemed the more worthy side. In the first 100-400 years, Castiel was a terrifying forcem until he caused a violent earthquake leveled a small village of innocents near the border of Velan Republic and the Godlands. Between the guilt from that incident and the growing schism in opinions between he and Dean, as they both lost memories of their lives before Abraxas, Castiel drifted away and isolated himself to the forest he once destroyed, becoming it's hermit guardian. He often takes to his true form/god form (1,000+ feet tall) and can be seen for miles wandering the forest. He sometimes goes across the channel to the Nether to visit Lucifer, where he watches tends the sparse pieces of forest on the Nether, and sits on the other side of the line drawn in the sand, accepting and comforting any Lucifer cultists that escape his brother's torment.
Cas's forest is Switzerland. He despises the deification of the Summoned, and any worshippers or shrine-builders will be immediately teleported out of his forest domain. Don't bring your shenanigans here. He's of the staunch opinion that god level beings should not be toying with mortal affairs. They have too much power to cause too much havoc if they make the wrong judgment call. There's never a solid wrong or right with humans, and violence becomes cyclical. Miss him with that shit. He's just here to tend to his forest, and protect the folks who take up residence there.
The one thing that will pull him out of the forest is Jo or Dean in imminent threat of death. Castiel will teleport in, do what he needs to, and leave just as quickly.
His domain is now a rich and vibrant landscape untouched by humanity with the endlessly profound expanse of the cosmos stretched through the sky. jump high enough and gravity will reverse, drawing you into the void, where you can settle in and become one with dark matter.

AESTHETIC
Castiel's god form is basically just his canon true form, which is: biblically accurate seraph, tall as the Chrysler building, six wings, wheels upon wheels, eyes everywhere, three heads of ever shifting faces and animals, his body the same kind of ever shifting, and bright as the fucking sun.
In his average, human form, he looks basically like a frumpy forest hermit when out about the people, who only know him in his forest as the gently hermit with a crazy knack for tending to the earth and healing. The trench coat is gone along with his memories from canon by the time he becomes the forest guardian.
